Step 1 ADD RED BERRIES & LIME

The ingredients
128g (33,7%) Raspberry puree
88g (23.2%) Sour Cherry Puree
48g (12.6%) Lime juice
48g (12.6%) Glucose syrup DE40 (LF)
44g (11,6%) Sugar
6g (1,6%) Pectin NH nappage (LF)
3g (0,8%) Fish gelatin (LF)
15g (3.9%) Water for gelatin

Process

Prepare the gelatin mixture ahead of time: soak the gelatin in water for 1 hour, then melt it at 55°C. Let it set for 24 hours before use.
Heat the purées with the lime juice and glucose. Mix the sugar and Pectin NH, then sprinkle in gradually. Bring to a boil. Remove from heat and add the gelatin mixture.
Pour about 30g per insert into the dome-shaped molds, then freeze.

Step 2 MARIGNY CHOCOLATE COOKIE - 30 x 40 CM BAKING SHEET

The ingredients
25g (4,8%) T45 flour
25g (4,8%) Corn starch (LF)
25g (4,8%) Cocoa powder
140g (26.9%) Sugar
130g (25%) Egg whites
120g (23.1%) Egg yolks
55g (10,6%) Soft butter
520g (100%) TOTAL
Process

Sift the dry ingredients. Beat the egg whites with the sugar until stiff peaks form. Gently fold in the egg yolks with a rubber spatula. Stir in the dry ingredients, then the melted butter.
Spread the batter evenly on a 30 x 40 cm baking sheet. Bake at 170 °C for about 12 minutes.
Let cool, then cut out 12 discs to fit the bases of the cones.

Step 3 CRUNCHY CHOCOLATE-PRALINE WITH FLEUR DE SEL

The ingredients
45g (12.7%) T55 flour
15g (4,2%) Corn starch (LF)
23g (6,5%) Cocoa powder
33g (9,3%) Hazelnut powder
3g (0,6%) Fleur de sel
60g (17%) Sugar
55g (15.6%) Soft butter
60g (17%) 70% Dark Chocolate
60g (17%) Hazelnut praline
353g (100%) TOTAL
Process

Using a spatula, mix together the flour, cornstarch, cocoa powder, ground hazelnuts, fleur de sel, sugar, and butter.
Bake at 150 °C for about 15 minutes in a convection oven. While still warm, stir in the dark chocolate and praline.
Roll out between two sheets of parchment paper to a thickness of 3 to 4 mm, let it set, then cut out 12 discs.

Step 4 VANILLA CATALAN CREAM MOUSSE

The ingredients
3g (0,4%) Fish gelatin (LF)
15g (2,2%) Hydrating Water
255g (37%) UHT Heavy Cream, 35% (1)
2 to 3 Vanilla beans
38g (5,5%) Whole eggs
73g (10,6%) Egg yolks
50g (7,3%) Sugar
255g (37%) UHT Heavy Cream, 35% (2)

Process

Soak the gelatin. Bring the cream (1) to a boil with the split and scraped vanilla bean.
Mix the eggs, egg yolks, and sugar. Pour the hot cream over the mixture, then cook at 85 °C.
Add the gelatin and cool quickly. Whip the cream (2) until light and fluffy, then gently fold it in.

Step 5 ASSEMBLY

Process

Pipe the Catalan mousse into the cone-shaped molds, carefully coating the sides.
Place the frozen red berry-lime insert in the center.
Cover with mousse.
Top with the Marigny biscuit, followed by the chocolate-praline crisp.
Smooth the surface and freeze completely before unmolding.

Step 6 SPRAY PAINTING

The ingredients
60g (60%) Cocoa butter
40g (40%) Chocolate
QS Fat-soluble dye
100 g (100%) TOTAL
Process

Melt the cocoa butter and chocolate.
Add food coloring until the desired shade is achieved, then mix.
Spray onto the completely frozen desserts using a spray gun fitted with a 1.4 mm nozzle.

Step 7 WHIPPED MILK CHOCOLATE GANACHE - REINDEER (4 PIECES)

79g (20,3%) Heavy cream (1)
8g (2,1%) Glucose syrup DE40 (LF)
9g (2,3%) Invert sugar (LF)
94g (24.1%) Milk Chocolate Coating
2g (0,5%) Fish gelatin (LF)
10g (2,6%) Water for gelatin
188g (48.2%) Cold heavy cream (2)
390 g (100%) TOTAL
Process

Prepare the gelatin mixture the day before: Soak the gelatin in water for 1 hour. Melt at 55°C and let it rest, ideally for 24 hours, before use.
Heat the cream (1) with the glucose and invert sugar. Add the soaked and squeezed gelatin. Pour over the milk chocolate couverture and emulsify. Add the cold cream (2), blend, then let set in the refrigerator. Whip with an electric mixer until the mixture has a smooth texture and is firm enough for piping.

REINDEER POCHAGE
Place the cone on a turntable. Using a small Saint-Honoré tip, pipe the whipped ganache from top to bottom, rotating the stand evenly to create successive layers around the cone.

Assembly and information

White cone:
White piping. Scarf, nose, and decorative elements made of modeling chocolate and/or tempered chocolate.

Santa Claus:
Red piped chocolate. Beard, hat brim, pom-pom, nose, and other elements made from modeling chocolate and tempered chocolate.

Christmas Reindeer:
Whipped milk chocolate ganache piped from top to bottom using a turntable with a small Saint-Honoré tip. Antlers, nose, and small decorations made from tempered chocolate and/or
modeling chocolate.

Store the desserts in the freezer until ready to serve. Pipe the decorations onto the frozen pieces. For the reindeer, pipe the whipped ganache using the technique described. Add the decorations, then let them thaw gradually in the refrigerator at +4 °C before serving.
