Transfer to a food processor fitted with the paddle attachment and mix for two minutes before gradually adding the eggs.
The dough is ready when it falls back slightly and is smooth and uniform.
Lightly grease a nonstick baking sheet and pipe out Paris-Brest discs.
Place the craquelin, cut into discs of the same size, on top.
Bake at 150°C for 45 minutes or longer, depending on the oven, with the oven door closed.
Open the oven door to let the moisture escape, then continue baking for 20 minutes at 130°C to thoroughly dry out the choux pastry. Remove from the oven and let cool.

Board
Sobacha can be used in infusions and as a crispy topping. Its toasty flavor adds an extra touch of indulgence.
Fish gelatin provides structure to help the cream set and aids in whipping it to a fluffy consistency when chilled.
Assembly and information
Whip the mousseline with an electric mixer while gently heating the sides of the bowl with a blowtorch.
Cut the Paris-Brest pastries into thirds and neatly trim the top.
Pipe a layer of Sobacha praline onto the bottom disc.
Pipe the mousseline onto the base and add the caramelized hazelnuts and Sobacha, then smooth the surface.
Pipe the remaining mousseline to the top using a PF18mm tip.
Place the top half on top and pipe small, irregular swirls of mousseline to hold the Sobacha chocolate discs in place.
