Pour the spherification mixture into molds (such as half-spheres), freeze, and store at approximately -18°C (do not store at a lower temperature, as this may cause the spheres to become brittle).
Mix the Sphere Gel with the sugar.
Stir the powder into the water.
Bring to a boil, then let cool to 80–85°C.
Pierce the frozen center and quickly dip it into the bath once or twice in a row to create a more durable coating.
Gently place the coated sphere on a surface by removing it from the skewer and let it thaw completely.
Note: If the coating begins to thicken too much, you can reheat it to thin it out.
For the jelly sheets: Follow the same preparation steps as for the jelly, but once it comes to a boil, immediately pour it onto a baking sheet, let it cool, and cut the jelly sheets into pieces.
