Step 1 Hazelnut Praline

Spread the hazelnuts on a baking sheet lined with parchment paper.
Toast for 15 minutes at 160°C (V3).
In a saucepan, bring the water and granulated sugar to 121°C.
Pour the hot sugar syrup over the still-warm hazelnuts and the used vanilla bean.
Stir until the sugar coats the nuts, then caramelize over medium heat.
Transfer to a baking sheet and let cool completely, then crush and process in a food processor or RobotCoupe to form a praline paste.
Step 2 Hazelnut and Hazelnut Praline Filling

Mix all the ingredients together until the batter is smooth and uniform.
Pipe 15 g of batter into 4-cm round molds and sprinkle with crushed roasted hazelnuts.
Freeze and store properly in the freezer.

Weigh the milk and cream into a saucepan.
Gradually sprinkle in the caster sugar, Souflix, and salt, which have been mixed together beforehand.
Add the egg yolks and bring the cream to a boil while whisking vigorously.
Transfer to the refrigerator, making sure to cover the surface with plastic wrap.

Using a whisk, smooth out the soufflé base cream and fold in the hazelnut paste.
Place the egg whites and granulated sugar in the bowl of a mixer and heat to 55°C in a double boiler, whisking continuously.
Add the Souflix and whip the meringue with the mixer using a whisk attachment.
Gradually fold the meringue into the hazelnut base cream using a rubber spatula.
Transfer to a piping bag and use immediately.
Step 5 Milk Chocolate Disc

Melt and temper the couverture chocolate.
Weigh out and smooth 320 g of couverture chocolate onto a 60 x 40 cm guitar sheet.
Before the chocolate crystallizes, use a cookie cutter to cut out 5 cmØ discs (TBC).
Set aside appropriately.
Assembly and information
Butter and sugar 7 cm Ø ramekins.
Pipe the hazelnut soufflé batter into the ramekins until they are 3/4 full, then place the hazelnut praline cream filling in the center.
Pipe more soufflé batter on top, then use a small spatula to smooth the surface so it’s flush with the rim of the ramekin.
Run your finger along the edge of the ramekin, removing half a centimeter of the mixture.
Bake for 14 minutes in a preheated convection oven with a baking sheet at 180°C (V3).
Upon removal from the oven, place the soufflé on a plate. Top with a chocolate disc and sprinkle with hazelnuts sliced thin on a mandoline.
Serve immediately.
Board
Souflix is a modified cornstarch that serves several purposes in a soufflé recipe. It thickens the soufflé’s base cream. Because it can thicken when cold, it also helps stabilize the whipped egg whites. Finally, it improves the soufflés’ shelf life when served.
Note: Souflix is stable when frozen and at high temperatures.
