Description
Sorbic acid is a preservative; it acts as an antifungal and bacteriostatic agent at higher doses than those required for yeasts and molds.
It is a weak acid and is most effective at a pH of 6.5.
It is less soluble in water than potassium sorbate.
There is approximately 1 mg of sorbic acid in 1.339 mg of potassium sorbate.
