DE40 Confiseur Glucose Syrup is a key ingredient in the production of confectionery, including caramels, fondants, gummy candies, chewing gum, and boiled sweets. It is an effective anti-crystallizing agent that minimizes the risk of sugar crystal formation, thereby ensuring a smooth and uniform texture.
This syrup also has a high viscosity, which contributes to a smooth, pleasant texture that is easy to work with, while allowing for optimal control over quality and texture during storage. Its stability during cooking makes it particularly well-suited for preparations subjected to high temperatures, thereby preventing the sugar from turning yellow (thanks to the presence of sulfites).
