Description
Maltitol is a polyol often used as a sweetener in food products, particularly those intended for people looking to reduce their sugar intake. It is obtained primarily from maltose, a sugar found in starch (often extracted from corn or wheat).
Louis François maltitol:
– Sweetening agent very similar to table sugar (sweetening power 90%)
– Calorific value 2 times lower than that of carbohydrates
– Stabilizes humidity and preserves softness and melting
– Brings plasticity to the pasta
– Not a sugar: does not color pasta
Louis François Maltitol is used in sugar-free products: confectionery, chocolates, bakery products, ice creams and sorbets.
Dosage and application
The dosage will vary greatly depending on the use. It is measured and used like beet or cane sugar.
Caution: Beyond a certain dosage, this product may have a laxative effect, which should be indicated on the packaging if the use is greater than 10%.
