Description
Espuma Chaud is a 100% plant-based professional product, formulated with corn fiber and gellan gum, designed for creating sweet or savory foams and mousses.
Versatile, it allows you to create hot or cold espumas with a light, airy texture, while ensuring excellent stability both during plating and when served.
Thanks to its ability to retain heat, stay cold, and withstand freezing, Espuma Chaud meets the needs of chefs in restaurants, pastry shops, and catering businesses by offering a reliable solution for creative and consistent preparations. Easy to use once the mixture has been heated, Espuma Chaud can be prepared in several ways: used directly while hot, used cold after cooling, or reheated in a double boiler before serving. Dosage and application
Concentration: between 3 and 8%
Stable à l’acidité sauf pH < 3
Heat the mixture to 80°C.
3 possible uses with the siphon:
– Use immediately while hot after heating to 80°C
– Use cold after heating to 80°C and cooling
– Use hot in a water bath (60°C) after heating to 80°C.
