Sunflower lecithin Powder Citric acid Chopped basil

Step 1 Basil gin infusion

The ingredients
100g (97%%) Agave syrup (Louis François)
3g (3%) Chopped basil (LF)
1000g (100%) TOTAL
Process

Leave the basil to infuse cold with the gin overnight.
Filter the next day.

Step 2 Acid solution

The ingredients
10g (25%) Citric acid (LF)
10g (25%) Malic acid (Louis François)
20g (50%) Water
40g (100%) TOTAL
Process

Add citric acid and malic acid to water.
Melt in the microwave to obtain a homogeneous solution.

Step 3 Shaker mix

The ingredients
6cl (55%%) Infused gin
2cl (18%%) Agave syrup (Louis François)
3cl (27%%) Citric/malic acid solution (Louis François)
Process

Add the infused gin, agave syrup and citric/malic acid solution to the shaker.
Shake with ice cubes.

Step 4 Molecular cloud

The ingredients
3g (1%) Sunflower Lecithin Powder (LF)
200g (66%) Water
100g (33%) Clarified lemon juice
303g (100%) TOTAL
Process

Pour the liquid into a large container.
Add sunflower lecithin.
Blend on the surface with an immersion blender (not deep down).
Wait a few seconds: a mousse will form on the surface.
Gently scoop the mousse with a spoon and place on the cocktail.
