Description

A member of the emulsifier family, sucro-ester is composed of a hydrophilic (water-loving) part and a lipophilic (fat-loving) part.
These characteristics enable it to :
- form and stabilize fatty emulsions
- homogenize and stabilize the fat in pastries, thus preserving their softness

Stable in alcohol, sucro-ester can also be used to make alcohol foam for cocktails.

This product is also freeze-stable and preserves its texture when thawed.

Dosage and application

3 to 10g/kg of mass, i.e. 0.3 to 1% of total mass.

Sucro-ester dissolves very easily when cold in the liquid.
