Description

DE25 Dehydrated Glucose Syrup can be used to reduce the sweetness of a formulation, which can improve the organoleptic profile of many products when sweetness is to be reduced.

It offers good solubilization and acts as an anti-crystallizing agent, particularly useful in acid sorbets or ice creams containing alcohol, where it helps limit crystal formation while providing more body and viscosity than a DE40 syrup.

It is also less hygroscopic than DE40 and dextrose, making it more stable in moisture-sensitive applications.

By replacing part of the sugar, weight for weight, it provides a less sweet taste while preserving the physical characteristics of the finished product.

Dosage: 3 to 50g/kg of mass
Processing: same as sugar
