Description
ProPure Pea is a plant-based protein used for its swelling capacity.
It solubilizes in aqueous media (water or fruit purée).
This protein is heat-stable and functional in neutral or acidic environments.
The presence of fat disrupts overrun.
Dosage and application
0.5 to 1% of the total mass
Add ProPure Peas to the water and blend with a hand blender before whisking until stiff.
