Description

Monostearate is a plant-based emulsifier that can be used... in pastries, ice cream and confectionery. It gives softness by strongly binding water, so the product remains moist after baking.

It also prevents staling: by forming a complex with starch, it delays its retrogradation.

It increases the volume of cakes, helps to incorporate more air in ice creams and prevents the crystallization of fats.

It can be used in combination with lecithin at a recommended dosage of 5g/kg.

1 to 10g / kg of mass - 0.1 to 1% of total mass
