Description
Monostearate is a plant emulsifier that can be used in pastries, ice cream and confectionery. It adds softness by strongly binding water, so the product remains moister after baking.
It also prevents staling: by forming a complex with starch, it delays its retrogradation.
It increases the volume of cakes, helps ice creams to aerate and counteracts the crystallization of fats.
It can complement the action of soy lecithin at a recommended dose of 5g/kg.
