Description

Louis François Meringue Mix is a ready-to-use solution that requires only the addition of water, followed by rapid beating to obtain a firm, stable mass.
It guarantees simple, regular use, while saving significant production time.
Its formulation optimizes foam stability, producing meringues with airy volume, light texture and reliable hold.

Dosage and application

Dosage: 1 kg meringue mix + 1 liter water + 2 kg fine sugar
Preparation:
- Mix the powder with water in the mixer, beating slowly.
- Whip faster until the mixture is very stiff.
- Remove the whisk and slowly add the sugar with a spatula.
- Using a piping bag, place on baking sheets lined with parchment paper.
- Bake slowly (140°C maximum) and leave the cooked meringues to dry.
