Description
Inulin is a soluble fiber derived from chicory.
It can easily be added to a wide range of food and drink products for nutritional benefit: pastries, confectionery, ice cream, sorbets and drinks.
It not only increases the fiber content of products, but also reduces the sugar and fat content of recipes by adding a fatty sensation and dry extract.
Thanks to its low sweetness (30% that of sugar), inulin is an ideal solution for sweetening recipes.
Dosage and application
20 to 50 g/kg of total mass - 2 to 5% of total mass.
