Description

Impertart has been specially developed to form a protective barrier, preventing moisture from fillings from migrating into tart bases, whether sweet or savoury.
It has also proved highly effective in stabilizing wafers, ice-cream cones and other sensitive preparations, protecting them from water pick-up during storage.

Dosage and application

Cookies, Pastries: 5 to 10% flour
Confectionery: 5 to 10% of mass
