Description
Xanthan is a thickener and stabilizer obtained by fermentation from sugar or glucose.
Extremely versatile, it stabilizes all your preparations and prevents syneresis.
Xanthan is stable to freezing, cooking, alcohol and acidity.
It is soluble both hot and cold, and disperses rapidly in aqueous media with agitation.
It works very well in synergy with galactomannans (guar gum, locust bean gum and tara gum). The combination of the two forms a gel.
