Description

Xanthan is a thickener and stabilizer by fermentation of sugar or glucose.

Extremely versatile, it stabilizes all your preparations and prevents syneresis.

Xanthan is stable to freezing, heat, alcohol and acidity.

It is both cold and hot-soluble and disperses quickly with enough agitation in aqueous media.

It works very well in synergy with galactomannans (guar gum, locust bean gum and tara gum). They can create gels when used together.

0.2 à 0.5%

Dissolve in a cold liquid using a whisk or a blender.
