Description
Vegetable glycerine is an excellent humectant: it stabilizes the water present in preparations, which improves preservation, prolongs softness and slows staling. It also provides a pleasant sensation of freshness in the mouth.
Used as a plasticizer, it gives doughs a softer, more malleable texture.
Glycerine can also be used as a solvent in the preparation of aromatic concentrates, and as a carrier for flavorings and colorants.
