Description
Gel Sphère is a solution for creating spheres with flowing cores, as well as gel veils for decorating dessert plates.

- Produces a transparent, fairly elastic gel

Dosage and application
4 to 5% of total mass
Freeze the preparation to be spherified at -18°C
Mix Gel Sphere with sugar and mix powders with water.
Bring to the boil, then cool to around 70°C. Prick the frozen heart and dip it into the bath.
Carefully place the sphere on a support and allow to thaw completely.
Veils: pour directly after boiling.

To create a more resistant layer, dip the sphere twice in the bath. Frozen spheres should not be too cold at the time of dipping: around -18°C is an appropriate temperature.
