Description
Gallimousse is a Louis François blend of emulsifiers, dairy proteins and plant-based fats of non-milk origin.
It acts as an expanding agent for aerated creams (chilled or frozen). It disperses easily in powdery mixtures and is readily soluble in water or milk.
Dosage and application
60 to 100g / liter of milk - 6 to 10% of total mass
