Description
Fructose is a sugar naturally present in fruit, known for its higher sweetening power than sucrose, which makes it possible to reduce the quantities used while maintaining the same level of sweetness.
Fructose has many properties:
- Humectant: improves the soft texture and extends the shelf life of cakes, gingerbread or madeleines.
- Lowers freezing point: in ice creams and sorbets, fructose is creamier than sugar.
- Anti-crystallizing: very useful in confectionery
- Accelerates coloring for natural gilding of cookies and pastries
- Dietetic: used in low-GI or reduced-sugar recipes
