Description
Fresh Cake is a specially formulated mix designed to preserve cake softness, slow staling and provide a melt-in-the-mouth texture. It also acts as an aroma-fixing agent, guaranteeing long-lasting flavor and optimum quality throughout storage.
Dosage and application
7% Fresh Cake by weight of flour and 3% Galliasorb
Without modifying your formulas, we incorporate Fresh Cake at the
dose of :
- 5 to 10% of flour weight for madeleines,
sponge cakes,
- 250g per kg of sugar for cakes.
