Description
Dextrose is a type of simple sugar (monosaccharide) belonging to the carbohydrate family.
It is pure glucose, an essential molecule that serves as a primary energy source for cells in the human body and microorganisms in general.
Its sweetening power is 30% lower than that of beet or cane sugar (sucrose).
Louis François Dextrose has a large number of properties:
- Improves the coloring of finished products
- Improves preservation and softness
- Promotes fermentation
- Is anti-crystallizing
- Lowers the freezing point
Dosage and application
Dosage will vary according to use.
Typically used between 3 and 10% and often as a substitute for part of the sucrose and/or glucose syrup.
