Description
Calcium chloride is a calcium salt. It provides rapidly available calcium in a liquid medium. It is soluble in water and ethanol.
Provides the calcium required for the gelling of certain texturizing agents (carrageenans, pectins, alginates, etc.).
Calcium chloride is mainly used with alginate to spherify fruit and vegetable preparations, syrups, etc. The result is pearls with liquid or solid cores that can be used as condiments or decorations in both savory and sweet dishes.
