Description

Chantifix prevents over-wetting, facilitates cream emulsion and makes it creamier.

It stabilizes prepared creams, especially whipped cream, prolongs shelf life and improves lightness.

Dosage and application

Dosage: 5 to 20g/kg - 0.5 to 2%.

20 g/kg if the cream is high in fat and not very textured

5 g/kg if the cream is textured

Preparation:
- Place cream in mixer.
- Whip on 1st speed and sprinkle with Chantifix.
- Then whip.
