Description

Corn starch, commonly known as Maizena, is a thickener and sometimes even a traditional food gelling agent, used in both savory dishes and desserts.
It has a short viscous texture, even an opaque gel. It disperses easily in cold water, and thickens on cooking. It is fairly resistant to shearing, but not very stable to freeze-thawing.
In dairy products, it is sometimes combined with other hydrocolloids to produce a short, gelled texture.
