Description
Citric acid is an acidifier, reducing the pH of preparations.
It also acts as a pH corrector in the manufacture of sucking candies, fruit jellies, etc...
It is sometimes used in baking powders in place of tartaric acid.
It is highly soluble in water, and easily soluble in ethanol. It thus helps control water activity.
It intensifies the antioxidant effect of ascorbic acid.
It is rapidly assimilated by the body.

For better dispersion of the acid in your preparation, use a solution of 50% water and 50% acid. Add it at the end of cooking your pectin-based jams or confectionery to prevent them from setting too quickly.
