Step 1 Basil gin infusion

Process
Leave the basil to infuse cold with the gin overnight.
Filter the next day.
Step 2 Acid solution
The ingredients
| 10g | (25%) | Citric acid ( |
| 10g | (25%) | Malic acid (Louis François) |
| 20g | (50%) | Water |
| 40g | (100%) | TOTAL |
Process
Add citric acid and malic acid to water.
Melt in the microwave to obtain a homogeneous solution.
Step 3 Shaker mix
The ingredients
| 6cl | (55%%) | Infused gin |
| 2cl | (18%%) | Agave syrup (Louis François) |
| 3cl | (27%%) | Citric/malic acid solution (Louis François) |
Process
Add the infused gin, agave syrup and citric/malic acid solution to the shaker.
Shake with ice cubes.
Step 4 Molecular cloud
The ingredients
| 3g | (1%) | Sunflower Lecithin Powder ( |
| 200g | (66%) | Water |
| 100g | (33%) | Clarified lemon juice |
| 303g | (100%) | TOTAL |
Process
Pour the liquid into a large container.
Add sunflower lecithin.
Blend on the surface with an immersion blender (not deep down).
Wait a few seconds: a mousse will form on the surface.
Gently scoop the mousse with a spoon and place on the cocktail.
