Raspberry chunks

Stage 1 Energy Ball Ossau Iraty

The ingredients
250g (80%) Ossau Iraty
35g (13,3%) Mascarpone
45g (6,7%) White almonds
100g (23,3%%) Dried figs
Process

Cut the Ossau Iraty and figs into pieces. Blend with the white almonds to obtain a paste, add the mascarpone and blend again.

Step 2 Coating

The ingredients
50g (20%) Raspberry slivers (LF)
90g (50%) Sunflower seeds
150g (40%) Chopped pistachios
Process

Coarsely chop pistachios and sunflower seeds.
Mix with raspberry slivers in a small bowl.

Assembly

Weigh and make 12g balls with the blended mixture, then coat in the raspberry mixture to cover the balls completely.
Leave to cool for 30 minutes and enjoy.
Tip: They can be eaten directly with the fingers, but they can be pricked with a wooden pick before cooling.
1 Kg of mixture and 270g of coating gives around 80 energy ball.

Raspberry slivers are easy to use and give an effortless boost to visual appeal.
They retain their color and don't lose moisture even after 72h at 4°C in a tin or shrink-wrapped.
