Step1 Vanilla Cake Mix - Sugar-Free

The ingredients
130g (25.1%) Süvy (LF)
106g (20,5%) Whole eggs
138g (26,7%) T55 flour
4,5g (0,9%) Baking Powder (LF)
5g (1%) Skim milk (LF)
2g (0,4%) Fine salt
110g (21,3%) Grape seed oil
2g (0,4%) Caviani
20g (3.9%) Madagascar vanilla extract
518g (100%) TOTAL
Process

In the food processor with the blade attachment, beat the Süvy with the eggs on high speed for 5 minutes.
Mix the powders together and add them to the beaten mixture on low speed.
Finish with the oil and vanilla.
Let the mixture rest for 12 hours before baking.

Assembly and information

Line a cake pan with a sheet of parchment paper cut to the right size.
Fill the pan 2/3 full with the batter, then add a thin line of butter in the center.
Bake at 325°F for 40 minutes, with the oven door closed and the fan set to 4/5. Check to see if it's done before removing from the oven.
When removed from the oven, cover the cakes so that they retain their moisture as they cool.

Board

The texture of cake made with Süvy is moister than a traditional sugar-based cake, so in addition to drastically reducing the impact on blood sugar levels, it improves the tasting experience.
